No Bake Brownies

Happy Monday!

I have felt like my head was on backwards most of the day. 

It started yesterday with an impromptu cook out that I ended up hosting. 

I cooked and cleaned but did none of the things I had originally planned and needed to do (like finishing laundry & editing this weeks blog photos, etc). This paired with over sleeping this morning- skipping my beloved breakfast and just barely getting enough time for dinner, much less lunch! Really had me feeling a down and out. 

But hey, that is your stereotypical Monday for you.

My solution? A quick guilt free treat. & yesIt worked 😉 THANK YOU FOR EASY BROWNIE LIKE RECIPES! I did not have the energy for complicated -possibly get ruined- brownies. I could not handle a bad batch of brownies right now and I am extra picky about brownies anyway so.. I was on thin ice with this craving. But I was determined.

While dinner was cooking, I whipped together these bad boys in about 5 minutes for an excellent dessert. Talk about easy! 

These remind me of the chocolate fudge pop-tart centers of my past.. mm mm

Honestly I don’t want to know what was in those pop tarts.  Just let me have the nice memory!

Anyway these come together very quickly with little mess, and my husband Jay thinks they taste like the cosmic brownies of his childhood lunch box past. I want to know if they remind you of anything from your childhood, be sure to let me know!

On to the recipe! 


No bake brownie bites

6-8 pitted dates

3/4 C walnuts

1/4 C raw cacao powder

1 tsp vanilla extract, powder, paste or bean

Quick drizzle of date syrup, maple syrup or agave ( I use date)

Pinch of Himalayan pink salt

Instructions:

1.Combine all ingredients in a food processor

2.pulse until a “dough” forms

3. Roll into balls or press into baking sheet/mold and chill for at least 30 minutes before serving for best results. 

4. Enjoy! seriously, it is that easy to make these.  This recipe will end up being a go to snack/dessert or even lunch box treat for the kiddos for years to come. 


**Notes, if it is too nutty and not holding together well, add another date or 2 first then if needed add liquid syrup in 1 tsp increments and pulse.
